Reimagined Filipino Cuisine: Where Heritage Meets Innovation at Café Summit

If there's one thing that defines Filipino cuisine, it's the soul behind every dish. From humble heirloom recipes to creative kitchen experiments, food in the Philippines isn’t just nourishment—it’s a story. And starting this June, Café Summit invites food lovers and culture seekers to embark on a flavorful two-month journey that celebrates the heart and soul of Filipino cooking.

Welcome to Reimagined Filipino Cuisine, a culinary showcase by Robinsons Hotels and Resorts that merges tradition with innovation—served fresh daily by six talented chefs from across the country. Think of it as a rotating food festival, where each day of the week brings a new chef’s story, culture, and creativity to your plate.

🍽 A Dish a Day: Savor the Flavors of the Philippines

From June 9 to August 10, 2025, every Café Summit branch nationwide will spotlight one featured dish each day, with Sundays reserved for the grand culinary finale—a spread of all six masterpieces in one indulgent feast.

Here’s what to look forward to:

  • Monday: Crispy Lechon Kinunot by Chef Mau (Café Summit Cebu) – A coastal-meets-classic creation blending Cebu’s iconic lechon with creamy seafood kinunot.

  • Tuesday: Maya-maya, Kahel, at Lukban by Chef Kiko (Café Summit Naga) – A citrus-kissed fusion of snapper, pomelo, and sweet saba that sings of the tropics.

  • Wednesday: Chicken Hinatukan by Chef Ricky (Café Summit Tacloban) – Comfort in a bowl, steeped in coconut milk, lemongrass, and local warmth from Eastern Visayas.

  • Thursday: Braised Shortribs Kinamatisan Ravioli by Chef Ace (Café Summit Greenhills) – Italian technique meets Pangasinan tradition in a luxurious tomato-infused pasta dish.

  • Friday: Beef Bulalo Riyandang by Chef Remie (Café Summit General Santos) – A bold cross-cultural tribute to bulalo and Malaysian rendang, spiced with memories.

  • Saturday: Crispy Handrolled Palabok by Chef Ernie (Café Summit Tagaytay) – A crunchy, bite-sized reinvention of the beloved noodle dish you didn’t know you needed.

And every Sunday, you get to experience the full journey: all six dishes, all in one unforgettable feast.

❤️ Culinary Innovation with a Heart

“Reimagined Filipino Cuisine is more than just a menu—it’s a celebration of identity, creativity, and the stories that bring us together,” shares Ms. Cecille Padilla, RHR’s Corporate Director for Food & Beverage. “Every plate represents not only flavor but the journey behind it.”

Each chef draws from their roots and regions, blending heritage techniques with modern presentations. Whether it’s Chef Remie’s Malaysian-inspired Bulalo Riyandang or Chef Ernie’s crispy twist on Palabok, every bite feels personal—because it is.
